  • 3 1/3 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon finely grated lemon peel
  • 1 pinch salt
  • 3 large eggs, lightly beaten
  • 6 tablespoons unsalted butter, softened and cut into tablespoons
  • 6 tablespoons sour cream, at room temperature
  • 2 tablespoons vegetable oil
  • 6 tablespoons water
  • vegetable oil, for frying cookie
  • confectioners' sugar, for dusting

1In the bowl of a heavy duty electric mixer, stir together flour, sugar, lemon peel and salt. Make a well in the center of the flour mixture and pour the beaten eggs into it. Using the paddle attachment of the mixer, beat the flour mixture on low speed just until combined.

2Distribute the butter pieces, sour cream and 2 tablespoons of vegetable oil evenly over the top of the flour mixture. On low speed, beat until blended. Scrape the bottom of the bowl. Pour the water over the dough. On medium low speed, beat the dough for 10 to 15 minutes until dough is smooth and elastic. If necessary, scrape the dough off the paddle occasionally.

3Gather dough into a ball, lightly dust with flour and wrap tightly in plastic wrap. Refrigerate for 8 hours or overnight.

4Pour enough oil into a large skillet so that it is 1 inch deep. Heat the oil to 350. While oil is heating, roll out the cookies.

5Cut the dough into quarters and keep the pieces refrigerated until ready to roll out. Pat a piece of dough into a square that is 1/16 inch thick. Cut the square into diamonds by cutting into 1 1/2 inch wide diagonal strips, first in one direction and then in the opposite direction.

6Using a metal spatula, carefully lift the diamonds up and transfer them to a baking sheet lined with waxed paper. Refrigerate the diamonds until you're ready to fry them. The dough is soft, and once it's chilled you can reshape the diamonds if they get distorted while being lifted.

7Fry the cookies about 12 at a time until they puff up and turn golden brown, about 2 to 3 minutes on each side. Transfer cookies to paper towels to blot up excess oil. Cool slightly. Generously dust with confectioners' sugar. Repeat with remaining pieces of dough, adding more oil if necessary.

Et la bonne nouvelle, c’est que cette recette est aussi la meilleure amie du post précédent (pâte à tartiner)🤪 Beignets à ma façon

  • Levain
  • 140 grs farine T 45 ou autres
  • 3 grs levure fraîche ou diviser par 3 pour poids de levure sèche
  • 90 grs eau

Tout mélanger, et laissez pousser 1H30 à température ambiante sous torchon.

Pâte à beignets

  • 125 grs farine
  • 35 sucre semoule
  • 4 grs sel fin
  • 20 grs lait demi écrémé
  • 30 grs levure
  • 2 jaunes d’œuf
  • 35 grs beurre

Peser le tout dans un robot coupe à lame, ajouter le levain, mixer tranquillou pour bien corser la pâte, environ 4-5 mn Max. Ajouter le beurre tempéré, mixer de nouveau 1 mn. Mettre dans un bol, filmer la surface et stocker une heure au frigo. Rabattre la pâte, remettre 2 heures minimum au frigo (ou laisser une nuit au froid pour obtenir une pâte ferme). Réaliser un boudin, couper en 8, bouler et poser sur plaque avec feuille cuisson et filmer délicatement le tout. Mettre au four pendant 30-40mn, température réglée à 40 degrés.

Sortir la plaque, chauffer de l’huile de friture (tournesol, arachide ou pépin de raisin), à 160 degrés Max. Frire chaque beignet environ 30 secondes de chaque côté. Attention, opération délicate, trop chaude votre huile risque de colorer trop vite vos beignets... méfiance!!!! Et cuisez ces beignets sans vos enfants à proximité SURTOUT🙂

Laissez refroidir 10 mn, rouler dans du sucre semoule, saupoudrer de sucre glace et laissez vous planer. C’est tellement de travail que vous allez surkiffer la dégustation, croyez moi!!!
